Eat More Muffins (Guilt-Free!)
Lauryn’s indulgent-tasting, nutrient-packed muffin recipe
You wake up in the morning and you’re zonked…ugh, and nauseous. It’s hard enough to think of eating something, never mind preparing it. So, worrying about it also being healthy? Forget it. Where’s the nearest breakfast sandwich or chocolate chip muffin? There goes your bonus “eating for two” calories!
When I was pregnant, my normally salty palette was swapped out for a suddenly wild sweet tooth. I wanted muffins, all the muffins. All day, every day. Muffins. It didn’t even matter the flavor, although if I could make it as unhealthy as possible with the addition of chocolate chips, coffee cake or swirl, I was into it.
After I survived the first trimester, I started feeling guiltier about my sugary sins. Now that the nausea was starting to subside, I decided that my calories should be fuel for the baby, not just daily deliciousness for myself. My mission: to create the tastiest healthy muffin in all the land. Mission accomplished!
Check out my doctored up recipe for muffins. Now you can survive the first trimester wake up rut without having to sacrifice all your craving allowance by breakfast. Rather than sugar and flour, you’re packing your body full of bananas, eggs, and coconut flour. Choose indulgent add-ins of your liking, while still giving baby the nutrition he or she needs.
Banana Coconut Flour Muffins
1/2 cup coconut flour (I know coconut flour can be expensive, but you use SO little per recipe vs. other flours that it is totally a great bang for your buck!)
3 over-ripe bananas
4 eggs
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon of vanilla extract
1 tablespoon of coconut oil
Pinch of salt
Drizzle of honey (to me this is optional; I found that if the bananas were ripe enough, you didn’t really need the honey)
Put all ingredients in a standing mixer or blender. Blend until smooth. Now, the fun part.
Add-ins! Feel free to add in whatever is making you feel great these days. Here are some of my favorites!
*Chocolate chips
*A handful of granola
*Mixed berries
*Sprinkle of cinnamon and sugar mixture on top
*A combo of granola AND chocolate chips or berries
*Crushed pretzels and chocolate chips
Bake muffins in a greased muffin pan for 20 minutes at 375 degrees.
